This July was the hottest July on record. The HOTTEST. July also happens to be when my birthday comes around, and I live in Florida.
And yet, I go to the beach. I sort of need a summer survival kit. After debating whether it’d be worth getting one, I finally decided to get a Corkcicle in the size that can hold an entire wine bottle, which proves to be very useful when you’re headed to the beach with just one other person and don’t want to bring a cooler. Instead, I made my beach cocktail a double (well, two doubles, one for me, and one for my friend) and trusted in the Corkcicle’s promise to keep things cold. No refills. No bottle openers. No digging around through ice (though that doesn’t sound too terrible on a hot day). Let’s call this one Beach Bum’s Rum.
Unlike my fellow millennials, I have not developed a crushing habit for sparkling water, namely LaCroix. But some of my friends are into it and that’s how I ended up trying the coconut version here. For several years, I’ve loved bringing a refreshing coconut-pineapple drink to the beach, sort of a light Piña Colada. The LaCroix makes for a light, fizzy addition that’s much lighter than any other version of coconut I’ve mixed in.

Instead of topping off with the fizzy water, I top it off with the pineapple juice, which can be very sweet. Use as much or as little as you like.
4 ounces dark rum
1 can coconut sparkling water, preferably LaCroix
Fill a large thermos, such as a 25-ounce Corkcicle, a third of the way with ice. Add rum and coconut sparkling water. Stir. Top off with pineapple juice. Stir.
Close the lid on your thermos and head to the beach and enjoy.
Makes 1 large drink.
