Spiced Pepita Brittle

Spiced Pepita Brittle

It hits sooner and sooner every year: pumpkin.

Pumpkin pancake mix. Pumpkin beer. Pumpkin everything. I picked up a bag of pumpkin spice pumpkin seeds at Trader Joe’s during the early pumpkin wave this season, and I have to admit: they were really good.

If you just can’t get enough pumpkin in your life, you’re in luck. Sara of Cake Over Steak is throwing a #VirtualPumpkinParty today with a ton of food bloggers contributing recipes featuring the squash du jour. It’s a seriously great round up of all things pumpkin, both savory and sweet.

I’ve been wanting to try my hand at brittle for some time (there’s a never-ending recipe to-do list around here!) and a pepita brittle with a few warm spices seemed like a fun way to go. I love green little pepitas aka pumpkin seeds, and this is a brilliant way to eat them. Also, breaking brittle is a super fun thing to do in the kitchen.

Now, I’m going to grab a cup of coffee and read through this bunch of pumpkin party posts. You should, too.

Spiced Pepita Brittle

Using a candy thermometer here would be a pain. And sticky. I’ve made caramel several times without it and you can, too. Just don’t leave your saucepan’s side, and watch for changes in color and texture. A note on pepitas: they are pumpkin seeds, but not from the same kind of pumpkin you’ll be carving for Halloween. It’s worth seeking out the green pepitas for this brittle; I found a bag of them at Trader Joe’s.

Makes enough for a crowd.

1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
Dash of chipotle chili pepper
1 3/4 cups raw pepitas
2 cups sugar
1/3 cup light corn syrup
1/2 cup water
1 teaspoon baking soda
4 tablespoons butter
1 1/4 teaspoons sea salt, plus more for sprinkling

Line a baking sheet with parchment paper and grease lightly with butter or a nonstick oil spray. In a medium bowl, mix ground spices to combine and stir in pepitas.

Place sugar, corn syrup, and water in a medium heavy-bottomed saucepan, and stir to moisten the sugar. Set to medium heat and bring to a boil. Tilt pan carefully occasionally to help dissolve sugar and cook until the mixture just starts to turn golden, about 8 minutes. (If using a candy thermometer, you’d be looking for it to hit 290°F right now.)

Moving quickly, stir in pepitas and spice mixture, salt, and butter to incorporate. Stir frequently for about another 2 or 3 minutes, allowing the pepitas to cook slightly. You may hear one or two pop. The mixture should be golden brown.

Remove from heat and quickly stir in baking soda (mixture may bubble up); immediately pour caramel mixture onto prepared baking sheet. Use a heatproof spatula to to spread out the mixture evenly. Quickly sprinkle with flaky sea salt. Let cool completely, about 20 minutes. Break sheet of brittle into smaller pieces and serve. Brittle will keep in an airtight container for about 1 week.
