Beets and Spinach

Happy Saturday! Time for a quick lunch.

Last night we went to Pearl in the Grove and had a pretty great meal as a birthday celebration for my boyfriend, Danny.

Catfish beignets. Smoky tomato grit cakes. Homemade bread. A wildly good blueberry and goat cheese pie. Wonderful, but so much! Today I needed a light lunch, just a quick sauté in olive oil of leftover sliced beets and some spinach.

Pumped it up with some avocado, green onions and Gruyère cheese.

What a lovely, hot pink mess. Thanks, beets. Almost looks like one of those Rorschach ink blot tests. Not that I see anything… do you?
